Watermelon Salsa with Fresh Mint and Cilantro

  • 4 cups watermelon cubes, seeded
  • 1 large red pepper, diced
  • 1/2 red onion, diced
  • 1/2 yellow onion, diced
  • 1 medium cucumber, diced
  • 1/2 cup mint leaves, torn
  • 1/2 cup cilantro leaves, torn
  • 1 lemon
  • 1 lime
  • 4 tbsp. honey


  1. In a large bowl, mix together the watermelon cubes, red pepper, diced onions, mint and cilantro.
  2. Remove zest from the lemon and the lime with a vegetable peeler.
  3. Cut the zest into matchsticks and add to the watermelon mix.
  4. Squeeze the lemon and the lime over the watermelon mix. Stir well to coat.
  5. Add honey to taste, mixing after each tablespoon to test flavor.


  • For extra kick, add a finely diced jalapeno pepper.
