Healthy Basil Recipe: Caprese Salad

Fresh tomatoes and creamy mozzarella get an extra boost of flavor with the addition of freshly picked Genovese basil leaves. Drizzle with olive oil and balsamic vinegar, or serve as is for a fresher flavor.

  • 4 tomatoes, cut in wedges
  • 3/4 cup mozzarella
  • 3 tbsp basil, Genovese, chopped
  • 1 tsp parsley
  • salt
  • pepper


  1. Toss the tomatoes, mozzarella, basil and parsley together in a glass or stainless steel bowl. Sprinkle with salt and pepper to taste.
  2. Cover and refrigerate for 30 minutes or longer to allow the flavors to blend.


  • Prepare up to 24 hours in advance and refrigerate until ready to serve.
