Classic Pesto with Basil

  • 2-3 garlic cloves, peeled and coarsely chopped
  • 1/2 cup pine nuts, shelled
  • 2 cups basil leaves, cleaned and loosely packed
  • 2-3 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup extra virgin olive oil
  • 1/4 cup Parmesan cheese


  1. Pulse garlic cloves in a food processor or chop them with a mincer until they are finely chopped.
  2. Add pine nuts, basil leaves, lemon juice and salt. Process until the nuts are finely chopped.
  3. Slowly add the olive oil through the food chute while continuing to process until the mixture resembles a thick paste.
  4. Add in the Parmesan cheese and pulse 3-4 times to mix the cheese into the pesto.


  • Let the garlic sit 15-30 minutes before starting the pesto to get the most nutritional value from it.
